A website I need to connect to is not compatible with the newest java release. So now I need to uninstall the new one and reinstall an older version.

How do I do this?

OSX Version 10.6.8

2.16 GHz Core 2 Duo iMac

You do do not need to and should not uninstall Java to revert to an older version. There is a utility in your Utilities folder named Java Preferences. It will allow you to select several versions of the Java Virtual Machine.
 
I only have the new version. I need Java SE 6 u27.

I also have Parallels with XP Pro but I am not sure which Java release is the right one. I have tried the Windows x64 and it doesn't work.

In terms of Windows, if you aren't sure, go with the x86 version:

Choose the "Windows x86 Offline" option.

It's much easier using an older JRE on Windows than it is in Mac OS X.

If you want to make sure you're using a specific version of Java on Windows, the easiest way will be to uninstall all of the versions you aren't using in Add/Remove Programs via Control Panel.
