It's time for me to upgrade my current MBP to something a little peppier, done a good job and has been going since 2006.

I am kinda stuck here with the newest versions not being upgradeable in the memory or HD department and I havent been keeping up with all the past changes.

So I guess my question is... Did they produce a MBP with a i7 quad and Nvidia 1GB or greater GPU?

I'm digging and I keep finding i7 duals with Intel/Nvidia 512MB setups.

You must have misread my question or maybe I didn't define it clear enough. I was asking about previous versions of the MBP that have upgradeable RAM and HD's.

The current 2012 cMBPs have upgradeable RAM and HDs. The current rMBPs don't.
 
The classic MacBook Pro (the upgradable one without Retina display) is still being sold right now:

It's the one on the left side with the blue wallpaper.

They didn't discontinue it when introducing the new Retina model and also updated its specs.

If you want a 1GB graphics card it's the second model at $2,199.
