Need some serious help with VPN over 3G on iPhone 4/iPad2

I have been trying for days now to get VPN working over 3G and still cannot get it to work. I wanna pull my hair out now. Here is what I have...

Mac Mini (snow leopard 10.6.8)
Time Capsule (7.5.2)
iVPN (6.1) or EasyVPN (1.5.1)
iPhone 4 (iOS 5)
iPad2 (iOS 5)

I can get this working over my Wifi while within my own network, but over 3G or at my offices Wifi is just not working for me. Not sure what else to do.

It's come to the point where I want to go out and buy a new Mac Mini Server with Lion for a grand... since it is all now integrated with the iPad/iPhone.

Please HELP. Step by Step instructions would really help.
