my current mac, which has the DVD drive, doesn't give me that option because I have a Windows7 install already.

So I am looking for suggestions on how to make my ISO on a USB for Windows 8.1 install onto my soon to be here no-dvd iMac

Actually you don't have to do anything until you get your new iMac. Every Mac that doesn't have a built-in DVD drive (since 2012) has the option to create a bootable USB from Windows 7/8 ISO when you run Boot Camp Assistant. Don't bother with the Windows applications that convert ISO to USB, they are only bootable for Windows machines, not Macs.

If you want to create an ISO file from your DVD installer, this link provides the easiest approach by using Burn in OS X, the equivalent of ImgBurn in Windows.
