After hours of research I've decided to purchase a 27" iMac. I will primarily be using it for FCPX and some gaming. I will be purchasing from the refurbished store on the Apple website. I've narrowed it down to these 2 models.

Refurbished 27-inch iMac 3.4GHz quad-core Intel Core i5
Originally released September 2013
27-inch (diagonal) LED-backlit display with IPS technology; 2560-by-1440 resolution
8GB memory
1TB hard drive
NVIDIA GeForce GTX 775M graphics processor with 2GB of GDDR5 memory
Built-in FaceTime HD camera

Refurbished 27-inch iMac 3.4GHz quad-core Intel Core i7
Originally released October 2012
27-inch LED-backlit display with IPS technology
8GB memory

1TB hard drive
NVIDIA GeForce GTX 675MX with 1GB
Built-in FaceTime HD camera

Should I go for the 2012 i7 or would the better GPU in the 2013 i5 benefit me more? I need some help deciding.

For what you want to do, I'd recommend you look at either the refurbished 2012 i7/680MX/1TB Fusion or the refurbished 2013 i7/780M/3TB Fusion.

FCP will make good use of both an i7 and of a better GPU.

They updated the site with some new models. They have an i5 with fusion + 2GB video card and an i7 without fusion + 2GB video card. Would you go for the i7 or the fusion drive?
