From a speed standpoint and both protocols using 2.4GHz, am I better off using a g network with a higher S/N (2.6) or an n network with a lower S/N (2.1)?

You best thing you could do is download the free software iStumbler Beta and make sure you are not using the same channel as other wireless points around you to prevent cross interference
Already have it. As a matter of fact, that is where I was obtaining the S/N. However, they are close enough that I was wondering if n had an advantage over g when same 2.4GHz band was used.

When 2.4 N is used it is just a band-aid tricking people in thinking they are getting true 5 GHz speeds. If someone what true 5 GHz speeds then use the channels that are in Hundred ranges.
