For desktop use I use a mini. Obviously in that case I just switch off the monitor and set the mini to never sleep. How would I do this with an iMac?
 
If I remember correctly, you can turn off the screen with Ctrl + Shift + Eject keyboard combination. I don’t own an iMac: let’s see if an iMac user can confirm this.

System Preferences<Energy Saver gives you a range of options, including turning the display off and preventing the computer from sleeping automatically when the display is off.

The ability to turn the display off while the computer is not sleeping works very well on any version of MacOS and hardware, including your Mini.

I've used it for years to save power consumption. Have mine set to turn off the screen after 15 minutes. I can also easily turn it off manually whenever I want by scrolling to a "Hot Corner". Touching any key instantly resumes the display. Highly recommended !
 
Yes, the keyboard shortcut above does it.

You can also use Hot Corners in preferences to put your mouse in the corner of your screen to turn the iMac screen off without sleep.
