My two day old 13" MBP 2012 is already at 99% according to istat pro:

Battery Health: 99%
Cycles: 2

shouldn't it be 100%? When I first got it I let it fully charge and then started using it, I haven't let it go to 0% yet.

Don't worry about it. It will likely fluctuate between 100% and ~98%. Doesn't mean anything. If it drops below 95% health, then you might start considering possibly maybe beginning to worry a little bit, but not too much.

My over one year old MBP is sitting at ~98% health, and I don't look after the battery at all.

My new rMBP actually has a higher than rated capacity out of the box. It was about 89% when I got it today, and it charged above 100%.

Thats normal!

Completely normal, that readout is as about as accurate as the fuel Gauge in your car.

It is perfectly normal if your battery health (maximum capacity) is more or less than 100%, even when brand new, or if it fluctuates up or down over time. For further details, read the CHECKING STATUS AND HEALTH section of the following link.

This should answer most, if not all, of your battery questions:
