Just got a 860 evo. I've heard Samsung's utility is good for program transfers. Is that true for the Mac as well? Do I need to re-format it?
 
Samsung's Magician app is for windows only. You're better off reformatting the SSD and cloning everything off your other drive using Carbon Copy Cloner.
