New Apple Watch SE - Unable to update

My new Apple Watch SE is currently on software version 7.3.1 and ive not been able to update it.

Within the iPhone watch app it says "To update the software on your Apple Watch, you first need to update the software on your phone"

I am already on 14.8!!!!

When I try to update directly from the watch, I get "Unable to check for Update. An error occured while checking for a software update"

Does any one have any idea what I can do?

Is it possible you have to update to iOS 15?

I really don't want to update to 15 if I can avoid it. :-(

Watch OS 8 needs iOS 15 sadly

Is there no way of going to the latest version of Watch OS 7? That's what I was hoping to do.

I've gone on to iOS 15. Hope I don't regret this.
