What's the point of beta's if you add extra features in after?

Well, developers did find a hidden "mic" button on the iOS keyboard layout for messaging, suggesting that voice control is in there somewhere, but other than that I don't see any major features being added now.

Usually if they add new features in during the beta, it's when the release the GM seed at an event. The new features usually have something to do with new hardware. Otherwise, current features can be slightly tweaked and are too trivial to mention.

FaceTime wasn't in any of the iOS 4 betas.
 
I'm pretty sure nuance speech will be added. The only question is if it will be in iOS 5 or just in the iPhone 5, making it one of things that will make you want to upgrade. Also I was hopping for a better Maps app but I don't think that will happen.
 
As others have mentioned Apple has added features that have nothing to do with devs needing access (ie. FaceTime). Speech-to-text is easily one of these if it's hooked into the keyboard, as it seems to be, which all apps already support.
