1. Does upgrading the hard drive on a MacBook Pro void its warranty?

2. Once I install the new hard drive, how do I install OS X on it?

1. No, unless you damage something while doing it. Obviously, the self-installed drive is not covered by Apple.

2. Use the grey install discs that came with your Mac and simply hold the alt key and boot from the DVD and follow the on-screen instructions.

Apple Warranty: Installing Memory, Expansion Cards, User Installable Parts Does Not Void Warranty

If Apple says the part is "user installable" then it does NOT void the Apple Warranty or the AppleCare Protection Plan, unless you damage something in the process. However, Apple will not cover any user-installed parts.

Does putting in a new hard drive drive void the warranty?
