I will be ordering a new iMac.
I plan to transfer files via Time Machine.
At present my current iMac uses Open Core Legacy Patcher. Does this fact mean anything when I do the Time Machine transfer? Do I need to do anything before I transfer to the new iMac?
 
From what I remember about Open Core Legacy Patcher, yes there are some issues you might face transferring that way. When you use OPCP on an older Mac, it uses root patches to enable a later OS to work. Remnants of those might get carried over.
Others will chime along soon, with better knowledge/support. I personally would use this chance to have a clean install, Copying files across that you don't sync to the cloud, and using the cloud to sync things back. Obviously I don't know your use case, but I keep all my documents in the cloud, and back up my documents folder, onto a SSD, manually, about once a month, or when I've made some big additions. My media is also kept on a SSD, and I screenshot my applications folder, to remind me when reinstalling, what I had.

I don't use cloud service and my TM backups automatically go directly to my older external.
What if I were to choose a back up date before I installed OCLP? Would this allow me to get past any OCLP attached root patches?

Or, would I be safer down grading to my original Catalina. Running Monterey now. Is that possible? Or does TM never forget.

With a change from Intel + OCLP to Apple silicon (Mx), you should start afresh regarding macOS, apps and your settings. But use Finder to transfer your files (documents, etc.) from old (TM snapshot) to new.

And, I strongly suggest starting again with TM on the new iMac. Keep the old TM disk just incase you have missed something in the transfer/update.

Don't do a downgrade - that will really confuse TM and generally be pain to work through.
 
I decided to do this and its running fine.
I chose to restore via a Time Machine back up. Didn't know if this would work but I tried it anyway. I selected a TM back up that was a week before I installed OCLP/Monterey.
And reinstalled Catalina via internet copy.
It went well and I’m back with Catalina with no trace of OCLP that I can find. I intend to gift my perfectly running 2012 iMac to my grand daughter.
Also, I ended changing my order to a Mac Mini Pro.
