This printer/scanner works fine on my previous iMac which is still being used. However, when I installed it on my new iMac, only the printer appears. No scanner function is available. I’ve tried uninstalling it and reinstalling it, but that didn’t help. Any suggestions?
 
Does Image Capture (Apple app) work?
If that doesn't work, you might consider "Vuescan" (pay-for software).

After looking into this, it won't work because the computer doesn't even recognize that I have a scanner at all. I've contacted Epson to see if they are working on driver updates for Big Sur. In the meantime, I still have my 2014 iMac I can scan from. An expensive option as I was hoping to sell it after I got my new mac set up.

Did you try Vuescan?
I believe it works in demo mode for a while.

I STRONGLY SUGGEST you give it a try...

I have a standalone Epson scanner, and once I installed the appropriate driver from Epson, the scanner worked with Image Capture, so you might check that. I have not tested the scanner with an Apple Silicon Mac, however.
The Epson Scan app does not work in Big Sur with the scanner I have.
 
The scanner won't be recognized unless there is an appropriate driver installed.

Big Sur uses ICA (ImageCapture) scanner drivers, not the old TWAIN drivers.

Check Epson's site to see if they support your printer under Big Sur, supply an ICA driver, then download and install it.

If they don't, you'll have to rely on 3rd party software like VueScan.

Also be aware that whatever scanning apps Epson has supplied in the past may not work on newer versions of macOS, so you'll have to rely on Image Capture, or another app going forward.
 
I checked on the Epson website. Their drivers don’t support Big Sur. I’ve contacted their support to see if they have plans to upgrade their drivers. Thanks everyone for your recommendations. I will look into VueScan too.
