I am getting a new iMac. I believe it is coming with Sierra, and I will have to update it to High Sierra, which is fine.

On my old iMac, I am participating in the High Sierra beta. I DO NOT want the new iMac to run the beta.

My question is: When I migrate the info from old to new, it won't somehow install the beta on my new iMac, will it?

I don't think it will install the beta (migration assistant doesn't migrate OS versions).

But -- I'm wondering if setup assistant will refuse to run when it finds you have connected to a Mac or backup (time machine or otherwise) that was created on a -newer version- of the OS...?

You'll just have to try it and see.

Having said that, it's possible to do a "manual migration", but it's considerably more work.

You were right on the mark. I called Apple before migrating because of a pop up info box saying I should update the new machine to the beta. They suggested I just try not updating to beta, but warned there probably would be a few hiccups. So far, the only one was the photos migration, which they helped me solve the next day. Honestly, it was the first time in 5 years of owning a Mac, iPhone, and iPads that I had to call Apple Care. They were very patient and helpful. Thanks for your response also!
