When a new iOS comes out, do you usually do a clean restore or just hit the upgrade button? I don't have much data on my phone right now so when 4.2 comes out I might just do a clean restore. What do you do?

Typical rule of thumb is, if you are not having any issues with your current install, then upgrading is all you'll have to do. Now after upgrading if you start to notice problems, then do the clean install. This way you save yourself the trouble on the front end if you go from no problems to no problems.
