Well I went to the Jacksonville apple store Sunday and bought the new iPad. I along with the guy check out the iPad inside and out and didn't ƒind any problems, so I am satisfied. I also have the iPad 1st gen and I wanted to transfer everything from # 1 to # 3 so I plugged the new 3 into iTunes and clicked on restore from backup and everything worked great. Well my question is should I also have clicked on authorize the new iPad also? Should I have? Everything seems to be working okay. Should I have done anything else?

I would have authorised your device, but it will definitely pop up again once it is actually needed. If you don't see the pop-up again, than it really doesn't matter. If you do than, next time, just authorise it. :)
 
You can also go into your account in iTunes and see which devices are officially registered to your account. If it's not listed there, then you will probably run into the message again when you try to buy an app or something.
