New iPhone 12 and Apple Watch question

Does anyone know the steps after I replace my old iPhone to the new iPhone 12 with the Apple Watch? Do I just insert my currant Sim card (Verizon) from my iPhone Xs to the iPhone 12 (sim -free) and there’s no further steps with the watch, good to go, or do I have to re-pair it again ?

There is a quick start process that when you bring the new phone near the old phone it asks if you want to set up the new phone with info from the old phone. During the process it is supposed to ask if you want to "transfer" the watch to the new phone.
