I think Apple is mainly aiming for thin and drop proof, as opposed to just scratch resistant. Which makes a lot more sense.
 
So it is not pure sapphire, which explains why it bends insteads of breaks. Interesting that Apple has come up with this compromise as pure sapphire is so hard that it would shatter when dropped.

Looks like Apple has come up with a hybrid sapphire material.
