Just wondering if it's still easy to install new hard disk drives and RAM with the new MBPs as it was with the old MBPs. Can't get a 7200rpm HDD with the 13" MBP via Apple but if I bought it myself would the 13" be able to handle it? I would think yes.

Yes it is still easy, you just have 7 more screws to remove to acces everything but it is not a big deal.

Make sure you have a Torx T6 screwdriver if you want to replace the HDD.
