I have a 2015 MBP 3.1 GHz with 16 GB of RAM. I shot some 1080p footage and when playing back on the internal SSD through the QT player it stutters and the playhead will move through the timeline but the video will stop. Is this an issue with the codec that the footage is using or the QT player or what?

Interestingly, VLC results in the video displaying as a pixelated disaster...

Are you playing back on the built-in monitor? Have you quit all other applications? Have you ejected all external drives?
 
I'm far from 100% certain, but isn't there a special codec for GoPro filmed stuff? I could be totally imagining that but there is a little thing in the back of my mind that is thinking it.

yep. Go Pro Cineform is resource intensive.

3. Make sure that your computer meets the minimum system requirements to play back videos from your camera.
For lower resolution videos (1080p 30fps and lower): We require at least 2.4 GHz Core 2 Duo processors (at least 2.4 GHz 2nd Generation Core-based processors recommended) and 4 GB RAM to play back lower resolution videos (1080p 30fps and lower).

For higher resolution videos (1080p 60fps and higher): We recommend at least 3.0 – 3.7 GHz Ivy Bridge processors (third-generation Core-based processors or AMD equivalent), 4 GB RAM, and a graphics card comparable to an NVIDIA GeForce GT 650M. The graphics card and processor speed is important particulary for 4K and 2.7K resolution video playback.

Perhaps you should convert the footage first.
