So I'm sitting here looking at this setup and asking myself why I waited so long to do it. Well I guess I couldn't have done it too much sooner since the M1 mini just came out but... it's turned out very nice.
I have gone back and forth on the idea of sticking with the mini and a quality monitor vs. a 27" iMac for quite awhile. For one reason or another I kept putting off the upgrade but would like to share how this has worked out for me. I managed to get the mini from Adorama with immediate shipping on a 512/16 config. Then I ordered the LG 27UN850-W from Amazon.
This combo so far is very nice. To my eyes using the 4K monitor in what is called "default" by the OS is taking the native resolution of 3840x2160 and running at an effective 1920x1080 image. Since it is using double the pixels the image is very nice. Obviously not at "retina" like the iMac 5k would be but this is twice as good as what I had before, with less money spent and I have 54 inches of screen real estate to work with!
Anyway, just wanted to post these thoughts if it helps anyone that is on the fence with the same decisions.
