I am prepared to buy a new 2.53GHz Mini and then add two Dell 23" monitors (each $343), wireless keyboard and mouse, iWork, Applecare. Price comes to $1752.

OR

Do I buy this 2.0GHz unit with more stuff that a student is selling for $900 (I add a 2nd monitor for $250).
2 ghz Intel Core 2 Duo processor
4 gb DDR3 ram (installed by apple so its covered under their warranty)
160 gb hard drive
Snow Leopard installed!
Superdrive, built in wireless N, bluetooth, and all the other apple goodies.

Also includes a ton of great software, such as:
Office 2008 for the mac
VMWare Fusion (windows xp!)
Toast Titanium
Handbrake

In addition to the Mac Mini, I will include:
Brand New 23 inch Gateway LCD full 1080p HD Monitor (awesome picture!)
Rocketfish Bluetooth Wireless Keyboard
Logitech MX Revolution Cordless Mouse ($100 bucks new, only a few months old!)
Insignia 2.1 speaker set
Handstand speaker stand (mac mini fits underneath it)
Mini-Display Port to DVI adapter
DVI to HDMI cable ($60! For hooking Mini up to a HDTV)
4 port USB adapter
 
I'm a bit confused. For the keyboard, mouse, etc, you said "I will include". Does this mean you are buying it, or was that copied from the ad selling the used model?

Anyway, while the .53 gHz is a pretty good jump in speed, unless you are doing a lot of processor intense stuff, you probably won't notice much difference between it and the 2.0. If all that software is legit, the used 2.0 is a good deal. If all that hardware is included, it is an absolute steal. It should still be under warranty, which means you can still buy AppleCare for it.
