iPhone 11 New phone coming tomorrow and question about setting up as new

So for the first time in ages I think I'm going to set my phone up as new rather than use a backup. I basically have everything turned on to be backed up to the cloud. So I am assuming that once I log into the phone with my Apple ID, all my notes, photos, health, contacts, etc. will make their way to my new phone. I just won't have all my old apps already on the phone, in exactly the same place they were, with all the same system settings. Is that correct? My apps are currently a mess and I don't use 90% of them and I want to start fresh. I also feel like I have a ton of useless stuff cached in memory (maybe) and would like all that purged. I assume that any apps I actually need will be clear over the first week or two, and they will have their data saved in the cloud when I download them again.

Just want to make sure I'm not missing anything.

BTW, I got a green iPhone 11 (64gb) to replace my beat up 6S+ that I've had forever. Got a clear slickwrap for it and screen protector, and will probably grab an Otterbox Lumen at the store to keep it safe for a while. Would like a fully clear case to show off all the green but need something flexible enough to fit around a phone with a skin on it. The Lumen seemed flexible enough to allow that.

Also, I assume everything in Wallet will also come back? I know I may need to set up a new bank and credit card, but I have some tickets in there and wondering if I will need to add them again, if possible.

I also chose to setup as new this year. I usually do a backup but wanted a fresh start. Once I signed in and got setup the only thing I missed was my app layout had to be re arranged. Everything else carried over just fine

Awesome, thanks! And I noticed Wallet was one of the iCloud options, so I am hoping my football tickets, etc. all transfer over just fine.
