I just installed the software that came with my new Microsoft Mouse, and I noticed two new preference panes (In addition to Microsoft Mouse)

"Ink" & "Default Apps"

I know Ink is for handwriting recognition. Why it got added, I don't know.

But what is Default Apps? Does this have to do with the Safari 4 Beta I installed? Can I get rid of it? Should I get rid of it? Why/How?

Ink is actually built into OSX and automatically shows itself when you plug in a device that uses it. One of those things would be a tablet. SO it is always there. Maybe your new mouse is some how triggering it or possibly even uses it. I do not see how but maybe. The other one I do not recognize.
