Maybe I’m just reading this thing wrong but, seems like the sun position/day-night tracking is off.

When it’s about 4pm, the solar position is just showing noon. When the sun has already come up in the morning, the solar dial is still showing night.

Solar time is usually displayed as GMT. What is your time zone in relation to GMT?

Eastern Daylight (GMT -4) but that doesn’t account for the discrepancy. If it was the GMT offset, the solar would be ahead of local time, not behind.

That’s weird!! Have you rebooted your watch to see if that fixes the bug? If not, it’s probably just a bug in the beta & you should send feedback.
 
Now, if only the Feedback app would stop crashing every time I try to edit the report and submit.
 
If you are 4 hours behind GMT, when it’s 4PM at your house, it’s noon in Greenwich, it looks like the watch is reading correctly.

You’ve got that backwards. If it’s 4PM in NJ ( on DST) it’s actually 8 PM in GMT.
