I was wondering if I can setup from beginning a new Mac with only a wireless keyboard and mouse. Both are Logitech products. MX Keys keyboard and MX Master 3 mouse. I do not have a wired keyboard available. Has anyone used these two items with recent Macs after unboxing?

If you can have the Logitech dongle programed on another computer to handle both, the keyboard and the mouse, then you can connect them to the Mac, connecting the dongle to one of the usb ports on your Mac. Then you will be able to set up your new Mac.
You don't need a dongle. I have both these devices working on a Mac Mini right now. They can be connected with Bluetooth or a USB-C cable. If you want to make it even easier, install the Logi Options+ app (instructions come with the peripherals). But these are devices that will be detected by a bluetooth-enabled Mac and don't need anything special.

But if the Logitech keyboard charges with a USB cable, just plug it in that way. You will now have a Logitech WIRED keyboard for setup.
I do have a Logitech wireless mouse (using their unifying receiver). When charging (via USB cable), it, too, behaves as a wired USB mouse.

There's no "data" being transferred... I have the exact keyboard and mouse as you and use them both while they're plugged in with the USB-C cables all the time (i tend to forget they're plugged in for charging).
Yup worked out well. Just plugging in unified receiver was like using a wired mouse and keyboard. It happed to be programmed to the Mac Pro im replacing. Thank you everyone for your help.
These devices will be detected by Bluetooth. As is my Logitech Lift mouse, no dongle needed. But you do need the Logi Options+ app to be able to program the buttons on the mouse. Unfortunately for me, Logi Options+ fails to install with no reason given
on my M2 Studio.
I use Logitech MX devices without their intrusive software. Startup is incredibly fast with Studio, so I need to wait a bit for keyboard and mouse to be connected. Otherwise it just works. And MX devices can connect up to 3 computers.
