So I bought a BNIB 15" tMBP mid tier from someone local, I would like to purchase Apple care for it. Do I need the original receipt? Should something happen to my new shiny toy within the 1 year of limited warranty will I need the original receipt to get it fixed?

No original receipt needed, you should be able to purchase it directly from your mac. Just click the 'Apple' logo top left and click on the service tab and follow the prompts.

Given that the tMBP has been out for a few months you can easily get AC from apple or anyone else (Amazon and BH Video have it cheaper) and increase your warranty to a full 3 years.
