So I am wanting to purchase an iRig device. Never done so. Have been looking on eBay and see original OEM iRig 1 and iRig 2 from like over ten years ago. I also see Chinese knockoffs going for a bit cheaper.

To add complexity, I see on YouTube people recommending something called an iRigHD, iRig USB and iRigHD-X.

I just wanna play guitar electronically.

I heard AmpliTube owns all of this, but not sure.

The earliest ones you can discount immediately because they only plug into an iPhone's headphone socket which hasn't existed for some time. You haven't said what device you want to plug it into. If it's a computer and not an iPhone you would be better off with a proper audio interface. If you are using an iPhone, be sure the iRig you buy comes with the correct cable to plug into your iPhone, which depending on its age will either be Lightning or USB-C.

EDIT: I would absolutely avoid any of the PRC knockoffs. When it inevitably breaks or manufuctions, none of your country's consumer protection regulations will help you; you may as well have just set fire to the money you bought it with.

I just bought iRig USB-C. It does what I want - it connects my electric guitar (Jackson) to Mac and iPad seamlessly. I use headphones connected to iRig too. On Macbook, I use it to use guitar in Logic Pro or Garageband. On iPad it has its own app Tunex (or something like that) and it has surprisingly high number of various tune modes (drive, clean, etc). I found that it enjoy it very much on iPad. On Mac it is just an interface but on iPad TuneX gives me a lot of enjoyment
