New to Mac, first thing to do is update it?

When I get my MacBook next week what's the first thing I should do, run the update in 'about mac'?

That's generally a good idea, yes.

In the past I used to reformat and reinstall the OS with only the components I wanted. I think with Lion it only installs the bare minimum anyways and does not give you the option to customize it. At least it didn't for the upgrade thumb drive.

So if there's no ability to say deselect the languages, other printer drivers then the only thing to do with a new mac is get it current with updates.
