I am new to the Mac platform coming over from windows and hope to never look back, can you provide a list of must have/try apps you have on your macs and a description of the program.

How long a piece of string is....What are you going to be doing with your new MAc? If you look at the Mac App store there are starter packs for work, games etc.

For productivity you have a couple of options. One is to go down the iWork route (Pages, Numbers etc.) The other is to buy a copy of Office for Mac.

As for utilities, it really does depend on what your primary use is going to be!
 
If you have a set of Windows apps that you use then searching for <utility name> OSX will typically return a Mac compatible version.

If you use your Mac for movie watching then Plex http://www.plexapp.com/ is highly recommended.
