Hi,
I can see that there's an update for the Leopard (10.5.3), I'm currently on 10.5.2.. the main question is: will my files and all my stuff plus the custom dock I've made will be deleted?

OS X does not overwrite user settings on during normal updates/upgrades.

If, however, you are performing a new installation or a major (10.x) upgrade and choose to "erase and install" rather than the default installation method, it will overwrite settings.

So what's the difference between them?

Upgrades just upgrade Applications and OS files. They do not touch your customized settings that are held in your home folder.

Erase and Install, completely wipes out everything on your disk and installs a fresh new OS.
