iPod touch Newbie question about iOS

I have got a 4th gen ipod touch 64gb. My question is what is the latest iOS there is I am running 5.1.1 according to itunes now. I am new this is my first (well second) I got a 16gb 1st gen for 3 days and traded it for this 4g had to replace the screen. and does anyone know a app to help make themes for ipod touch I am planing on jailbreaking it so on cydia is what I need.

It's been years since I've jail broken, so there is probably something better now, but WinterBoard was always good for theming.

Will winterboard let me add custom icons too I used winterboard to change bg and lock bg on the 1st gen I had but want to make full themes including icons

Jailbreak with a program named Absinthe.

Winterboard will allow you to apply themes you have made yourself or downloaded/ purchased from cydia.
