Nifty Mac Applications for a Newb

I got my Mac Mini last night. I've been using an eMac off and on for about a year.
So, I've been using Adium, Cyberduck, and Transmission. I just downloaded the
new Safari Beta and I LOVE IT!.

I've also been through the sticky a little and found it a tad over whelming.

I installed the Picasa Beta last night and have to say it's one of the best photo
management programs I've ever used. I like the basic very user friendly editing
options of iPHOTO, but can't stand how it seems to organize the photos.

So my question is, what nifty apps do you good people use? I'm not necessarily
looking for anything specific, but something you may think will enrich my experience.

I always recommend Solitaire XL to every user asking for cool applications. It's the best way to waste your time.
