2011 MacBook Pro 15" i7 2.2GHz completely dies when battery runs low. On past Macbook pros, they would automatically hibernate when the battery runs down to 3%. With my new macbook, it just dies and I have to boot up from scratch.

Is this expected behaviour or do I have some mis-configured settings?

Have you properly calibrated your battery, to make sure your readings are accurate? Also, you could try resetting the SMC. Instructions for both in the following link. This should answer most, if not all, of your battery questions:
 
My 2011 13" MBP auto sleeps when the battery is at critical level

pmset -g | grep hibernatemode

run that command to see what the hibernate mode is set too
