For some reason Safari doesn't seem to have a dark mode. I've tried switching between light/dark mode manually, auto, restarting my computer, nothing helps. I didn't even realise until recently that apparently Safari is meant to have a proper dark mode. Anyone got any idea what's going wrong here?

My bad guys, I finally figured out the issue. For some reason NightOwl (which I haven't even used since Catalina came out) had some sort of 'force light mode' setting enabled. After disabling that option and logging out and back in again, I now have actual dark mode for Safari, Finder, Messages, etc. Man I feel like an idiot now!
