Have you tried to reset the watch (hold crown and side button down together till apple logo shows). Also go to the apple watch app on your phone, then messages, and click off mirror my iPhone to custom, then back to mirror my iPhone.
I had to call technical support to fix another issue where my stand minutes weren't being recognized, and they were very helpful. So you can always do that if the above doesn't work.
