So maybe a dumb question but I noticed that there is no longer an option to trade in your old watch in person at a specific store and that it's now mail-in only. I've had a couple bad experiences sending stuff to Apple's third party vendors and given that it's now the only option (for watches, anyway) I assume this is maybe a new policy to avoid the barrage of folks coming in swapping their old watches at launch? Or do they still do this in store if you just show up and ask?

Just go to Apple store in person, show your old watch and tell them it is time for trade-in.

Figured this. Just wanted to lock in the current trade in value and have things ready when I show up. Also wanted to pre-order in the event they sell out of the only new color option (Space Gray).
