So I decided to check if my watch has been backed up to my phone, but when I look in Settings -> General -> iPhone storage -> Watch there is nothing under documents and data.

Does the backups disappear from there when backing up the iPhone encrypted to iTunes? Otherwise my watch isn't backing up for whatever reason. I hope that's not the case.

That's just not true. If it was there would be no way to restore if the watch breaks or is lost.

"Apple Watch content backs up automatically to your companion iPhone, so you can restore your Apple Watch from a backup. When you back up your iPhone to iCloud or iTunes, your iPhone backup will also include your Apple Watch data." - https://support.apple.com/en-us/HT204518

The problem I have is that I can't verify that a backup has been made. I want to know for sure that my watch is backed up in case something happens to it.
 
Can I ask what data is held on the watch that needs to be backed up? Isn't everything transferred to the phone?

Did you read the support document posted above? Thats what's in it.

To the OP the only watch backups that will show in your iPhone storage section are the ones created when unpairing the watch. All other watch information is in the iPhone backups on iCloud or through iTunes to your computer.
