If my wife goes paddle boarding with an Apple Watch Series 4 non-cellular how far can she go from her Apple iPhone X in terms of still getting notifications and calls if the phone is on the beach? I heard Bluetooth 5.0 is a lot better in terms of range.

If perfectly clear line of sight, call it 100 feet. But toward the edge, it will start cutting out. Note that if the phone is sitting in a bag on the sand, range will be cut quite a bit. By "perfectly clear line of sight" I mean the phone is sitting in the open, raised off the ground. (On the seat of a not-metal chair with maybe a shirt covering it.)
