I have Zero interest in gaming on my Macs, I use Aperture a little, Adobe CS3and Final Cut Express a little.

Other than a bit of future proofing would the high end MPB with the better video card do anything for me. (not concerned with the minor processor and hard drive upgrades either)

I am not really concerned about future proofing, I rarely keep a machine over 2 years.

Main concern is am I wasting $500 in going with the high end model. It seems like the low end MBP would suit my needs just fine.

I just wanted to get a few other opinions.
 
It would probably benefit those apps a bit, but if you're only going to keep it 2 years, and not game on it, don't bother. Stick the extra $500 in the bank, and you'll have an extra 50 bucks towards your next purchase in 2 years time.

Now if you were going to keep it for 3-4 years, different story.
 
Plus I could use some of that left over $500 to get 4 gig of 3rd party RAM!
