I would like to use my M-Audio USB Keyboard and my iBook for a band on stage, but don't want to use Garageband for the instruments. Are there any other software instruments that would be compatible with both the iBook and M-Audio keyboard?
 
Lots, what kind of sounds are you looking for?

Native Instruments do a great range of stand alone softsynths, ranging from the Absynth synth to the B4 Hammond organ, and some others as well, Reason is a good group of synth and samplers that is very easy to use stand alone, and can be run as a bank of different machines over different MIDI channels.

Abelton Live is highly thought of, as are the Omniphonics synths.

If you really want to get serious, Logic Pro has a killer set of synths and samplers too.
