The number one reason I can think of is that the file size will be huge. On a 64/128 GB phone that might not be too bad, but on a 16 GB phone, you'll eat through storage like no other.

Nah can't think of any other reason other than storage for video.

About HDR though, some photos turn out looking kind of like they were drawings and I can see why not everyone would like that. However I have mine set to auto and save both the original and the HDR copy.
