On iTunes I use the option to normalise my music, but when I copy songs to USB I loose the normalise set and I must manually increase or decrease the sound. How I can fix that

I don't think you can, the normalise option is a function of the iTunes software and that software is not on your USB stick.
 
It may be too much bother, but I guess you could re-record your music by using some software that records what you can hear on the Mac - something like soundflower. Then you can transfer your levelled audio files to the USB
