Is there any way to have Mail start up without the last message viewed being opened? In other words, I basically don't want any e-mail shown in the preview pane until I select one from the left. Is this possible?
 
You can Command-click on the currently selected message in the list pane. Then nothing will show up in the viewing pane and this choice will be retained when you restart Mail.

So I'll have to Command-click before quitting... every time I quit Mail.
 
You can also click on your Inbox at the top level, assuming you are viewing messages within a particular account's Inbox. If no message is selected there, then that will also give you the desired behavior.
