Without your watch I don't believe you can get your iPhone to count your steps.

Unless you use an IOS app such as Argus. This is the app that I have used for a few years, and I find it very accurate.

iPhone 5S and up have a motion co-processor that counts steps in the background. 6/6+ also have a barometer to help estimate "flights of stairs climbed"

The iPhone tracks steps with or without a watch, at least it did.
