Note Syncs Back After Backup

Hi,
So basically I lost all my notes so I used iTunes to do backup,I prevented doing automatic syncing and did the backup.However after the backup when iPhone is connected to the internet only the notes revert back to the erased version and all the other things such as contacts remains the same.Could you please help me solving this problem ?

And is it possible to reach an accidentally deleted note after backup.(no iCloud,It seems like my account was registered there but I don't know If It backed up so :eek:)
