Thanks Robert--I had two apps for notes. One that I installed a long time ago and forgot about. It was a pay service to sync notes between watch and phone since earlier IOSs did not have this. I quit using this app, but thought it was the official Apple app and reinstalled it.

The actual Apple app is working fine--glad to have Notes on my Ultra 2. DOH!

How do you access folders in the notes app on AW? My notes are all synced okay but it's just one long list. I have a couple of folders set up in Notes on my iPhone to keep things organised but I cannot see a way to select the folders on my watch.
 
You can’t. Notes is very limited on watch. You can group by date or just have one long list. The pinned notes appear at top in their own group. You also can’t edit existing notes on the watch… only read or “complete” checklist items. You can create a new note but can’t format it.
 
Yup, disappointed the Watch app doesn't offer true folder support to keep things organised. In the meantime, I'm temporarily pinning older notes that I need to access on the Watch.
 
They won’t stay in sync on the watch. They reappear after re-syncing, but disappear when I go out and return.
