Perhaps this animation change also applies to other versions of macOS too, I don't know.

For years I've had the right Option key set to Show Desktop in Sys Prefs–Mission Control.

Pressing that key has moved the windows to the display's sides, which side depends on where on the screen the windows is located. It's a cool animation actually, where they slide away much like a theatre's curtain does, to reveal the stage. It's possible to see where a window is located when slid away because a bit of its edge will be visible at the side of the display.

Until I installed Security Update 2021-007 this animation remained the same, but after the update the windows just go transparent to reveal the desktop. Oddly, though, Apple has elected to keep showing the windows' edges at the sides of the screen.

I'm quite disappointed to see this change, not only because as a matter of design logic it's completely unnecessary to show edges of windows that have simply evaporated, but mainly because the old animation was so effortlessly beautifully implemented.

Anyway, just thought I'd share this.

I'll answer my own question because I'm happy to have discovered the reason for the changed behaviour. It's actually a setting, under Sys Prefs – Accessibility – Display – Reduce motion. Unticking that brings back the sliding animation. Oddly enough I have no recollection of ever having ticked that box.

That's a very cool idea for a shortcut just by the way, might try that myself
Thank you :) Yes it's really handy. I've used it since my first Mac in 2008 and it's become a habit by now to just hit the right Option key to drag a image into an email, open another file etc.
