Why is it that when we record a workout through the Nike Run Club app on the nike Apple Watch (considering it promotes using the nike app pretty much through the association) it doesn't seem to record the Vo2 Max readings as opposed to using the workout app?

I am not sure if it ever did this, but I have tried resetting most settings including even the watch but it doesn't seem to do a reading when I use the NRC app for a workout as against the workout app.

Any suggestions?

It still records the VO2 max it just does not display it in the app. You can find it in Heath or if you have a third party app like HealthFit.

But I do agree that the Nike App does not work with the iPhone as well as it should. And I have the Nike version of the Apple Watch 6. Like I do not understand why the GPS route does not show on the iPhone Workout app. Like ALL other running apps do that, but NRC doesn't. Annoying...

I haven't been able to find it on health as well. The only time I have recorded Vo2 Max readings in the health app is when I use apple's own workout app which is quite annoying I feel. Yep the GPS route is another annoying lack of integration. I would have expected that all the features that the workout app captures would be seamless while using a nike branded watch as well!
